SHIPWRECK
 
 
2 Large onions
1 Pound of ground beef
1 Cup of celery chopped
1 Cup diced carrots
2 Medium potatoes
½ Cup of long grain rice
1 Can tomato soup
1 Can boiling water
1 can of whole or diced tomatoes(796ml)
salt and pepper to taste
 
Peel onions and slice over bottom of casserole.
Sprinkle with salt and pepper.
Slice potatoes and layer over onions.
Sprinkle with salt and pepper.
Put diced carrots evenly over potatoes.
Pat cooked (drained) ground beef over this layer.
Sprinkle again with salt and pepper.
Put rice on next (evenly), followed by celery.
Mix soup and hot water together, pour over top of mixture.
Put a can of whole or diced tomatoes evenly over top of this.
 
Bake covered at 300*F for 3 hours
 
Helpful Tips:
 
Use your imagination!
Spice it up a bit if you like, with some garlic, or other spices
Sometimes I use stewed tomatoes...
You can also add diced turnip- with the carrots, if you desire.
A hearty meal, for a hearty appetite!

ULTIMATE
STIR FRY
 
1 lb beef (450gr) sirloin, ½ lb boneless chicken, ½ lb pork
about 1'' wide x 2'' long x1/8'' 5 cm x 2.5 cm x0.3 cm
 
MARINADE
 
1/4 cup. soya sauce 1 clove garlic, crushed
11/2 tbsp. corn starch ½ tsp. ground ginger
½ tsp salt 2 tbsp.peanut oil
3 tbsp. Sherry cooking wine
~
 
6 cups assorted vegetables
 2 tbsp. Peanut oil
broccoli, cauliflower, onion
celery, green/red pepper (optional)
2 tbsp. water
 
 
 
GRAVY
4tbsp. soya sauce (depending on taste)
1 tbsp. corn starch
½ cup water
 
 
Cut beef/chicken/pork at 45 degrees across the grain.
Mix marinade ingredients and marinate beef, chicken and pork for 30 minutes.
Heat wok and add 2 tbsp. of oil and stir fry beef for 3-4 minutes.
Remove meat.
Heat peanut oil.
Add vegetables and stir fry(cut in bite size pieces). Add water and cover the wok for about 3-4 minutes.
Move vegetables to the side, make the gravy in bottom of the wok.
Mix, and heat through.
 
 
I just love this recipe!
Tastes great on a bed of rice!
Don't forget to experiment-
add more or less depending on taste...

YORKSHIRE PUDDING
 
 
Preheat oven 450*F
 
1 Cup flour
1 Cup warm milk
2 Eggs
½ Teaspoon salt
6 Teaspoons of cooking oil
12 Cup muffin pan
 
Combine well beaten egg with warm milk; beat until light.
Gradually beat in flour and salt; beat until smooth (let stand for about 30 minutes)
 
Put about ½ tsp of cooking oil in each muffin cup. Put pan (with oil in it) in preheated oven for 2 minutes.
Remove pan from oven (it may be smoky- that's normal), pour batter evenly into muffin pan and return to oven.
Bake for approximately 15 minutes or until golden brown.
Watch carefully.
 
 
Helpful Tips:
 
Use warm milk
About 3 minutes before puddings are done, turn back temperature to 400*F
Instead of spooning mixture into pan, put batter in a measuring cup- makes pouring mixture easier.
 
Taste great with gravy poured over them, with meat, and mashed potatoes, or whatever your heart desires...
Try adding some onion soup mix to your gravy... awesome...

CHEWY MILK CHOCOLATE COOKIES
 
1st
 
  - beat 2/3 cup (150 ml) of melted butter
- 2 cups (500 ml) of lightly packed brown sugar
- 2 eggs
- 2 tablespoons hot water
mix well
 
2nd
 
- stir in 2 2/3 cups (650ml) of flour
- 1 teaspoon (5 ml) baking powder
-1 teaspoon (5 ml) baking soda
- 1/4 teaspoon salt
 
3rd
 
 
stir in one small pkg of chocolate chips (or desired amount)
 
4th
Drop from small spoon onto ungreased cookie sheet.
Bake at 375 degrees for about 8-10 minutes.
 
makes around 5 dozen

Apple streusel muffins
 
1 1/2  cups (375 ml) all purpose flour
   1/2  cup  (125 ml)  white granulated sugar  
1  tbsp (15  ml)  baking powder
1/2  tsp  (2 ml) salt
 
measure first 4 ingredients & set aside in large bowl.
Stir and make well in  centre.

1  large egg
2/3  cup (150 ml)  milk
1/4  cup (60 ml) cooking oil
   3/4 cup (175 ml) coarsely grated peeled cooking apple
     (such as mackintosh)
 
Combine next 3 ingredients, in small bowl.
Add apple... stir, add to well.
Stir until just moistened.
Fill 12 greased (or use paper cups) 3/4 full.

Topping
 
1/4        cup (60 ml)          Brown sugar  (packed)
   2         tsp (30 ml)          All purpose flour
1/8         tsp (.5 ml)          ground cinnamon
    1       tbsp (15 ml)          hard margarine
 
Combine first 3 ingredients in small bowl. Add & cut in the hard butter until mixture resembles course crumbs.
Sprinkle on batter.
 
Preheat oven to 400 degrees
Bake for 15-20 minutes

APPLE CAKE
 
1 Cup sugar
2 cups diced apples
1 beaten egg
1/2 cup vegetable oil
1 1/2 cup flour
 
1 tsp baking soda
 
1/2 tsp cinnamon
1/2 tsp salt
 
Mix in order -
If you do not mix the ingredients in order
 it will not turn out the way it should
 
Pour into a greased 8 x 8 inch pan
Bake until tooth pick comes out clean.
 
Bake 350 degrees for 30 minutes
